Ingredients:

2 chicken breasts
2 tablespoons olive oil
2 tablespoons honey
2 tablespoons Dijon mustard
2 tablespoons white wine vinegar
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
2 large carrots, peeled and cut into 1/2
inch slices
2 tablespoons olive oil
2 tablespoons honey
2 tablespoons Dijon mustard
2 tablespoons white wine vinegar
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper

Cooking Instructions:

Preheat oven to 400°F.
In a small bowl, whisk together olive oil, honey, Dijon mustard, white wine vinegar, garlic, oregano, thyme, salt, and pepper.
Place chicken breasts in a shallow baking dish and pour the marinade over them. Turn to coat both sides.
