Ingredients:

1/2 cup cubed butternut squash
1 tablespoon olive oil
Salt and pepper to taste
2 ounces grilled chicken breast, diced
2 cups mixed greens or baby spinach leaves
1/4 cup diced red onion
1/4 cup diced apple For the Apple Cider Vinaigrette:
2 tablespoons apple cider vinegar
1 tablespoon olive oil
1 teaspoon honey
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 400°F (200°C). Place cubed butternut squash on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Roast for 20 minutes or until tender. Set aside to cool.
In a small bowl, whisk together all ingredients for the vinaigrette until combined. Set aside.
