Ingredients:

2 boneless skinless chicken breasts (200g)
2 tablespoons olive oil (30ml)
1 teaspoon garlic powder (5g)
1 teaspoon paprika (5g)
Salt and pepper to taste (2g each)
2 cups broccoli florets (200g)
2 carrots, sliced into thin rounds (100g)
2 tablespoons olive oil (30ml)
1 tablespoon lemon juice (15ml)
1 tablespoon honey (15ml)

Cooking Instructions:

Preheat the oven to 400°F/200°C. Line a baking sheet with parchment paper.
Place the chicken breasts on the prepared baking sheet. Drizzle with olive oil and season with garlic powder, paprika, salt, and pepper. Bake for 20 minutes or until cooked through.
Meanwhile, place the broccoli florets and carrots on a separate baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper to taste. Roast for 15 minutes or until tender-crisp.
In a small bowl whisk together the lemon juice, honey, salt, pepper, and remaining olive oil until combined. Set aside until ready to use.
To assemble the salad place the roasted vegetables in a large bowl along with the cooked chicken breasts cut into cubes or strips if desired). Drizzle over the lemon vinaigrette dressing and toss to combine everything together evenly before serving warm or cold as desired!
