Ingredients:

2 chicken breasts
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 bunch asparagus, trimmed and cut into 1
inch pieces
1 cup mushrooms, sliced
2 tablespoons Dijon mustard
2 tablespoons white wine vinegar
2 tablespoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper

Cooking Instructions:

Preheat the oven to 400°F.
Heat a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until cooked through.
Meanwhile, in a large bowl, combine the asparagus, mushrooms, 1 tablespoon of olive oil, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Toss to combine.
