Ingredients:

2 slices of whole wheat bread
2 tablespoons of olive oil
1 boneless chicken breast, grilled and sliced into strips
1/2 cup of shredded cabbage or coleslaw mix
1/4 cup of diced apples
2 tablespoons of mayonnaise or Greek yogurt
Salt and pepper to taste

Cooking Instructions:

Heat a skillet over medium heat. Add the olive oil to the skillet.
Place the chicken strips in the skillet and cook for about 5 minutes on each side until cooked through. Remove from heat and set aside.
In a bowl, combine the cabbage or coleslaw mix, diced apples, mayonnaise or Greek yogurt, salt and pepper to taste. Mix until everything is well combined.
Toast the bread slices in a toaster or on a griddle pan until lightly golden brown on both sides.
Place one slice of toast on a plate and top with the chicken strips followed by the apple slaw mixture. Top with the other slice of toast to make a sandwich. Serve immediately while still warm.
