Ingredients:

2 slices of rye bread
2 tablespoons butter, softened
2 ounces smoked Gouda cheese, sliced or shredded
½ cup roasted red onion slices

Cooking Instructions:

Preheat a skillet over medium heat. Spread the butter on one side of each slice of bread. Place the slices of bread in the skillet butter-side down.
Layer the cheese and roasted red onion on top of one slice of bread. Top with the other slice of bread, butter-side up.
Cook for 4-5 minutes until the bottom slice is golden brown and crispy. Flip the sandwich over and cook for an additional 4-5 minutes until both sides are golden brown and crispy and the cheese is melted.
