Ingredients:

2 slices of sourdough bread
1 tablespoon butter, softened
2 ounces pepper jack cheese, shredded
1 roasted poblano pepper, sliced into strips

Cooking Instructions:

Preheat a skillet over medium heat.
Spread the butter onto one side of each slice of bread. Place the slices butter-side down onto the skillet.
Top one slice of bread with the shredded cheese and roasted poblano pepper strips. Place the other slice of bread on top, butter-side up.
Cook for 5 minutes or until golden brown and cheese is melted. Flip the sandwich over and cook for an additional 5 minutes or until golden brown and cheese is melted.
Remove from heat and serve warm.
