Ingredients:

2 slices of sourdough bread
1/2 cup of roasted eggplant, diced
2 slices of provolone cheese
2 tablespoons of butter, melted

Cooking Instructions:

Preheat a skillet over medium heat.
Place the two slices of sourdough bread on a cutting board.
Spread the melted butter evenly over one side of each slice of bread.
Place the two slices of bread butter-side down onto the preheated skillet.
Top one slice with the diced roasted eggplant and two slices of provolone cheese.
Place the other slice of bread on top, butter-side up.
Cook for 4-5 minutes until golden brown and cheese is melted.
Flip the sandwich over and cook for an additional 4-5 minutes until golden brown and cheese is melted through.
Remove from heat and serve warm with your favorite condiments or sides!
