Ingredients:

2 slices of white bread
2 slices of roast beef
2 tablespoons of blue cheese crumbles
1 tablespoon of butter or margarine
2 slices of cheddar cheese or other melting cheese

Cooking Instructions:

Heat a skillet over medium heat. Spread the butter or margarine on one side of each slice of bread. Place the slices in the skillet, butter side down.
Place the roast beef and blue cheese crumbles on one slice of bread. Top with the other slice of bread, butter side up.
Cook for 3-4 minutes until the bottom slice is golden brown and crispy. Flip the sandwich over and cook for an additional 3-4 minutes until golden brown and crispy on both sides.
Add the cheddar cheese or other melting cheese to the top slice of bread and cook for 1-2 minutes until melted and bubbly.
Remove from heat and serve hot!
