Ingredients:

2 slices of raisin bread
1 tablespoon of butter, melted
2 tablespoons of olive oil
1 small onion, thinly sliced
2 ounces of brie cheese, sliced into thin pieces
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a medium skillet over medium heat. Add the onion slices and cook until they are golden brown and caramelized, about 8-10 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
Spread the melted butter on one side of each slice of raisin bread. Place the slices butter-side down onto a preheated skillet over medium heat. Top each slice with brie cheese slices and caramelized onions. Cover the skillet with a lid or foil to help melt the cheese faster. Cook for 3-4 minutes until the cheese is melted and the bread is golden brown.
Carefully flip each sandwich over using a spatula and cook for an additional 3-4 minutes until golden brown on both sides. Serve warm with your favorite condiments or sides!
