Ingredients:

2 cups gluten free all
purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 tablespoons honey or maple syrup
2 tablespoons olive oil or melted coconut oil
1 cup almond milk or other non
dairy milk of choice
½ cup chopped walnuts (optional)

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and set aside.
In a large bowl, whisk together the gluten free flour, baking powder, baking soda and salt.
In a separate bowl, mix together the honey or maple syrup, olive oil or melted coconut oil and almond milk until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix. Fold in the chopped walnuts if using.
Pour the batter into the prepared loaf pan and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean. Let cool before slicing and serving.
