Ingredients:

2 cups gluten free all
purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
¼ cup honey or maple syrup
2 tablespoons olive oil or melted butter/coconut oil
1 cup almond milk or other non
dairy milk of choice
½ cup raisins

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or coconut oil.
In a large bowl, whisk together the gluten free all-purpose flour, baking powder, baking soda and salt.
In a separate bowl, mix together the honey/maple syrup, olive oil/butter/coconut oil and almond milk until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix!
Fold in the raisins until evenly distributed throughout the batter.
Pour the batter into the prepared loaf pan and bake for 40 minutes or until a toothpick inserted into the center comes out clean. Let cool before slicing and serving. Enjoy!
