Ingredients:

1/2 cup gluten free oat flour
1/2 cup gluten free oat flour
1/4 cup buckwheat flour
1/4 cup almond flour
1 teaspoon baking powder
1/4 teaspoon baking soda
Pinch of salt
3 tablespoons maple syrup or honey
3 tablespoons melted coconut oil or butter
3/4 cup almond milk or other non

Cooking Instructions:

In a medium bowl, whisk together the oat flour, buckwheat flour, almond flour, baking powder, baking soda and salt.
In a separate bowl, whisk together the maple syrup or honey, melted coconut oil or butter and almond milk until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Heat a non-stick skillet over medium heat and grease with coconut oil or butter if needed.
Scoop 1/4 cup of batter onto the skillet for each pancake and cook for 2-3 minutes on each side until golden brown and cooked through. Serve warm with your favorite toppings such as fresh fruit, nut butter or maple syrup!
