Ingredients:

1 cup of gluten free all
purpose flour
2 tablespoons of ground flaxseed meal
1 teaspoon of baking powder
¼ teaspoon of salt
2 eggs
1 cup of almond milk (or other non
dairy milk)
2 tablespoons of melted coconut oil (or other vegetable oil)

Cooking Instructions:

In a medium bowl, whisk together the gluten free flour, flaxseed meal, baking powder and salt.
In a separate bowl, whisk together the eggs, almond milk and melted coconut oil until combined.
Slowly add the wet ingredients to the dry ingredients and whisk until combined. The batter should be slightly thick but still pourable.
Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.
Pour ¼ cup of batter into the center of the skillet and swirl it around to evenly coat the bottom of the pan in an even layer. Cook for about 2 minutes or until golden brown on one side then flip and cook for another minute or so on the other side until golden brown as well.
Repeat with remaining batter until all crepes are cooked through. Serve warm with desired toppings such as fresh fruit or nut butter!
