Ingredients:

250g gluten free whole grain flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
60ml vegetable oil or melted butter
120ml milk or dairy free alternative milk of choice
2 tablespoons honey or maple syrup For the Filling:
2 tablespoons melted butter or vegan butter alternative
2 tablespoons brown sugar
1 tablespoon ground cinnamon For the Icing (optional):
60ml icing sugar

Cooking Instructions:

Preheat oven to 180°C and line a baking tray with parchment paper.
In a large bowl, mix together the gluten free whole grain flour, baking powder, ground cinnamon and salt until combined.
In a separate bowl, mix together the vegetable oil or melted butter, milk or dairy free alternative milk of choice and honey or maple syrup until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix as this will make the dough tough.
Turn out onto a lightly floured surface and knead for about 5 minutes until it forms a smooth dough ball.
Roll out into a rectangle about 0.5cm thick and spread with melted butter or vegan butter alternative followed by brown sugar and ground cinnamon for the filling. Roll up from one end to form a log shape then cut into 8 equal pieces using a sharp knife or pizza cutter. Place on prepared baking tray leaving some space between each roll as they will expand during baking.
Bake in preheated oven for 25 minutes until golden brown on top then remove from oven and allow to cool slightly before adding icing if desired (mix together icing sugar with enough water to form an icing). Serve warm!
