Ingredients:

1 cup gluten free all
purpose flour
1/2 cup rolled oats
1/2 cup almond meal or almond flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 ripe bananas, mashed (about 1 cup)
2 tablespoons coconut oil, melted and cooled slightly
2 tablespoons honey or maple syrup
2 tablespoons milk of choice (dairy or non
dairy)
1 teaspoon vanilla extract
Optional add
ins such as chopped nuts, chocolate chips, etc.

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with coconut oil or line with parchment paper. Set aside.
In a large bowl, whisk together the gluten free flour, oats, almond meal or almond flour, baking powder, baking soda and salt until combined.
In a separate bowl, mash the bananas until smooth. Add the coconut oil, honey or maple syrup, milk of choice and vanilla extract and mix until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix!
Fold in any optional add-ins if desired.
Pour the batter into the prepared loaf pan and spread evenly with a spatula or spoon. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing and serving.
