Ingredients:

1 cup gluten
free all
purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup almond milk (or other non
dairy milk)
2 tablespoons melted coconut oil (or other oil)
2 tablespoons maple syrup (or other sweetener)

Cooking Instructions:

In a medium bowl, whisk together the gluten-free flour, baking powder and salt.
In a separate bowl, whisk together the almond milk, melted coconut oil and maple syrup.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Heat a nonstick skillet over medium heat and lightly grease with oil or butter if desired.
Pour about ¼ cup of batter onto the skillet for each pancake and cook until bubbles form on top and the edges are golden brown, about 3 minutes per side.
