Ingredients:

2 cups gluten free all
purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup granulated sugar
2 tablespoons light brown sugar
2 tablespoons melted butter or margarine (dairy free if desired)
3/4 cup buttermilk or dairy free alternative
1 teaspoon vanilla extract

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or margarine.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
In a separate bowl, mix together the sugars and melted butter until combined. Add in the buttermilk and vanilla extract and mix until combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix! The dough should be slightly sticky but still manageable.
Transfer the dough to the prepared cake pan and spread it out evenly with your hands or a spatula. Bake for 25 minutes or until golden brown on top and cooked through in the center when tested with a toothpick. Allow to cool for 10 minutes before serving warm or at room temperature. Enjoy!
