Ingredients:

150g gluten
free flour blend (such as Bob’s Red Mill)
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons olive oil or melted butter
120ml warm water

Cooking Instructions:

In a medium bowl, whisk together the gluten-free flour blend, baking powder and salt.
Add the olive oil or melted butter and mix until combined.
Slowly add the warm water and mix until a dough forms. Knead for a few minutes until the dough is smooth and elastic.
Divide the dough into 8 equal pieces and roll each piece into a ball.
On a lightly floured surface, roll out each ball into a thin circle about 15cm in diameter.
Heat a large non-stick skillet over medium heat and cook each tortilla for about 1 minute on each side until lightly browned and cooked through.
