Ingredients:

2 tablespoons of melted butter or margarine
2 tablespoons of brown sugar
1 teaspoon of ground cinnamon
2 tablespoons of gluten
free flour mix (such as Bob’s Red Mill)
1/4 teaspoon of baking powder
1/4 teaspoon of salt

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a baking sheet with butter or margarine.
In a small bowl, mix together the melted butter or margarine, brown sugar and ground cinnamon until combined.
In a separate bowl, mix together the gluten-free flour mix, baking powder and salt until combined.
Add the wet ingredients to the dry ingredients and stir until a dough forms.
On a lightly floured surface, roll out the dough into a rectangle about 8×10 inches in size. Spread the cinnamon mixture over the dough evenly and roll up into a log shape. Cut into 8 equal pieces and place on prepared baking sheet.
Bake for 25 minutes or until golden brown and cooked through. Allow to cool before serving.
