Ingredients:

120g gluten free flour blend
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons melted butter or oil of choice
2 tablespoons honey or maple syrup
1 large egg
120ml milk of choice
1 teaspoon vanilla extract
150g fresh or frozen blueberries

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or oil. Set aside.
In a medium bowl, whisk together the gluten free flour blend, baking powder, baking soda and salt. Set aside.
In a separate bowl, whisk together the melted butter or oil of choice, honey or maple syrup, egg, milk and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix!
Gently fold in the blueberries until evenly distributed throughout the batter.
Pour the batter into the prepared loaf pan and spread it out evenly with a spatula or spoon.
Bake for 40-45 minutes until golden brown on top and a toothpick inserted into the center comes out clean with no wet batter attached to it.
Allow to cool for 10-15 minutes before slicing and serving warm with butter or your favorite topping! Enjoy!
