Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 zucchini, diced
1 cup mushrooms, sliced
½ teaspoon dried oregano
½ teaspoon dried basil
Salt and pepper to taste
¼ cup breadcrumbs

Cooking Instructions:

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened.
Add the bell peppers, zucchini and mushrooms to the skillet and cook for 5 minutes until softened. Stir in the oregano, basil, salt and pepper.
