Ingredients:

1 medium squash, cut into cubes
2 tablespoons olive oil
1/2 cup panko breadcrumbs
Salt and pepper to taste
2 tablespoons butter or margarine

Cooking Instructions:

Preheat oven to 375°F.
Place the cubed squash on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper to taste.
Bake in preheated oven for 10 minutes.
Meanwhile, melt the butter or margarine in a skillet over medium heat. Add the panko breadcrumbs and stir until lightly browned and fragrant, about 5 minutes.
Remove the squash from the oven and transfer to the skillet with the panko breadcrumbs. Stir until evenly coated with the crumb mixture.
Return to oven and bake for an additional 5 minutes or until golden brown and crispy on top. Serve warm as a side dish or as an appetizer!
