Ingredients:

100g cooked shrimp
1 mango, diced
1/2 red bell pepper, diced
1/4 cup cucumber, diced
2 tablespoons red onion, diced
2 tablespoons fresh cilantro leaves
2 tablespoons olive oil
1 tablespoon lime juice
Salt and pepper to taste

Cooking Instructions:

In a medium bowl combine the cooked shrimp, mango, bell pepper, cucumber, red onion and cilantro leaves. Mix until evenly combined.
In a small bowl whisk together the olive oil and lime juice. Pour over the salad mixture and toss until evenly coated. Season with salt and pepper to taste.
Serve immediately or chill in the refrigerator for up to one hour before serving. Enjoy!
