Ingredients:

1 large flour tortilla
2 eggs
2 tablespoons of shredded cheese of your choice
2 tablespoons of cooked chorizo sausage crumbles
½ cup of diced fresh fruit of your choice (e.g. strawberries, blueberries, etc.)

Cooking Instructions:

Heat a large skillet over medium heat. Add the chorizo sausage crumbles and cook until lightly browned. Remove from the skillet and set aside.
In the same skillet add the eggs and scramble until cooked through. Remove from the skillet and set aside.
Place the tortilla on a plate or cutting board. Sprinkle the cheese over one half of the tortilla followed by the scrambled eggs, chorizo sausage crumbles, and diced fresh fruit.
Fold in half to form a burrito shape then place in a preheated 350°F oven for 5 minutes or until heated through and cheese is melted. Serve warm with salsa or hot sauce if desired.
