Ingredients:

150g green beans
1/2 red onion, finely chopped
1/4 cup chopped parsley
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste

Cooking Instructions:

Wash the green beans and trim off the ends. Place them in a pot of boiling water and cook for 5 minutes or until they are tender but still crisp. Drain and set aside.
In a large bowl, combine the cooked green beans with the red onion, parsley, olive oil, lemon juice and salt and pepper to taste. Mix well until everything is evenly combined.
Serve the salad immediately or chill in the refrigerator for up to 3 days before serving.
