Ingredients:

2 large eggs, hard boiled and peeled
2 slices of bacon, cooked and crumbled
2 tablespoons of mayonnaise
1 teaspoon of Dijon mustard
1 tablespoon of chopped fresh chives or green onions
Salt and pepper to taste
2 slices of bread or 1 hamburger bun
1 lettuce leaf

Cooking Instructions:

In a medium bowl, mash the hard boiled eggs with a fork.
Add the crumbled bacon, mayonnaise, Dijon mustard, chives or green onions, salt and pepper to the mashed eggs. Mix until all ingredients are combined.
Toast the bread or hamburger bun if desired.
Spread the egg salad mixture onto one slice of bread or one half of the hamburger bun. Top with lettuce leaf and remaining slice of bread or other half of hamburger bun. Serve immediately.
