Ingredients:

2 slices of whole wheat bread
2 large eggs, hard
boiled and diced
2 strips of bacon, cooked and crumbled
½ avocado, diced
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
Salt and pepper to taste

Cooking Instructions:

Toast the two slices of whole wheat bread. Set aside.
In a medium bowl, combine the diced eggs, crumbled bacon, diced avocado, mayonnaise and Dijon mustard. Mix until everything is evenly combined. Season with salt and pepper to taste.
Spread the egg salad mixture onto one slice of toast and top with the other slice of toast to make a sandwich. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
