Ingredients:

1 boneless, skinless chicken breast (150g)
2 tablespoons of all
purpose flour (20g)
2 tablespoons of olive oil (30ml)
1/4 cup of Marsala wine (60ml)
1/4 cup of chicken broth (60ml)
2 tablespoons of butter (30g)
2 tablespoons of chopped parsley leaves (10g)

Cooking Instructions:

Place the chicken breast between two pieces of plastic wrap and pound it with a meat mallet until it is about 1/2 inch thick.
Place the flour in a shallow dish and season with salt and pepper. Dredge the chicken in the flour to coat both sides.
Heat the olive oil in a large skillet over medium heat. Add the chicken and cook for 3-4 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside on a plate.
Add the Marsala wine to the skillet and bring to a simmer, scraping up any browned bits from the bottom of the pan with a wooden spoon. Simmer for 3-4 minutes, or until reduced by half.
Add the chicken broth to the skillet and bring to a simmer again, stirring occasionally until reduced by half again.
Reduce heat to low and add butter to skillet, stirring until melted and combined with sauce. Return chicken to skillet and spoon sauce over top to coat evenly. Sprinkle with parsley leaves before serving warm over your favorite side dish or pasta dish!
