Ingredients:

200g plain flour
1 teaspoon of sugar
1 teaspoon of salt
7g sachet of fast action dried yeast
2 tablespoons of olive oil
150ml warm water
4 tablespoons of tomato puree
2 tablespoons of chopped fresh basil leaves
100g mozzarella cheese, grated

Cooking Instructions:

In a large bowl, mix together the flour, sugar, salt and yeast.
Make a well in the centre and add the olive oil and warm water. Mix together until it forms a dough.
Knead the dough for 5 minutes until it is smooth and elastic. Place in an oiled bowl and cover with cling film or a damp tea towel. Leave to rise for 30 minutes in a warm place.
Preheat oven to 220°C/200°C fan/Gas Mark
Roll out the dough on a lightly floured surface into a round shape about 25cm in diameter. Place on an oiled baking tray or pizza stone if you have one.
Spread the tomato puree over the base leaving a 1cm border around the edge then sprinkle over the basil leaves and mozzarella cheese. Bake for 15 minutes until golden brown and crispy on the edges.
