Ingredients:

1/2 cup cooked chickpeas
1/4 cup chopped parsley
1/4 cup chopped cilantro
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon garlic powder
Salt and pepper to taste
2 tablespoons tahini sauce
2 tablespoons lemon juice
1 whole wheat wrap or pita bread

Cooking Instructions:

In a food processor, combine the cooked chickpeas, parsley, cilantro, olive oil, cumin, coriander, garlic powder, salt and pepper. Pulse until the mixture is combined but still slightly chunky.
In a small bowl mix together the tahini sauce and lemon juice until combined.
Heat a non-stick skillet over medium heat. Add the falafel mixture to the skillet and cook for 5 minutes or until golden brown on both sides.
Place the falafel mixture onto the wrap or pita bread and top with tahini sauce mixture. Serve immediately.
