Ingredients:

2 falafel patties
2 tablespoons of hummus
2 slices of whole wheat bread
1/4 cup of diced tomatoes
1/4 cup of diced cucumber
1 tablespoon of olive oil
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 350°F (175°C). Place the falafel patties on a baking sheet lined with parchment paper. Bake for 10 minutes until golden brown.
Spread the hummus on both slices of bread.
Top one slice with the tomatoes, cucumber, and falafel patties. Drizzle with olive oil and season with salt and pepper to taste.
Place the other slice of bread on top to form a sandwich. Cut in half if desired and serve immediately.
