Ingredients:

2 large flour tortillas
1 cup cooked chicken, shredded or diced
1 cup shredded cheese (cheddar or Monterey Jack)
2 tablespoons olive oil or butter
Salt and pepper to taste

Cooking Instructions:

Heat a large skillet over medium heat. Add the olive oil or butter.
Place one of the tortillas in the skillet and top with the chicken and cheese. Sprinkle with salt and pepper to taste.
Place the second tortilla on top of the filling and press down lightly with a spatula.
