Ingredients:

2 large eggs
1/4 cup shredded cheese of your choice
2 slices of ham or bacon (optional)
1/2 cup diced bell peppers or other vegetables of your choice
2 tablespoons salsa of your choice
1/4 avocado sliced or diced

Cooking Instructions:

Heat a large skillet over medium heat. Add the eggs and scramble until cooked through. Remove from heat and set aside.
In the same skillet over medium heat add the ham or bacon (if using) and cook until crispy. Remove from heat and set aside.
Add the bell peppers or other vegetables to the skillet and cook until softened.
To assemble the burrito add the scrambled eggs to a warm tortilla followed by the cheese, ham or bacon (if using), vegetables and salsa. Top with avocado slices or diced avocado if desired.
Fold up one side of the tortilla then fold in each side before rolling up completely to form a burrito shape.
Heat a dry skillet over medium heat for about 1 minute then place the burrito in it seam side down for about 2 minutes until lightly browned then flip over for another 2 minutes until lightly browned on both sides. Serve warm with extra salsa if desired!
