Ingredients:

2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 red bell pepper, diced
1 teaspoon dried oregano
1 teaspoon dried basil
4 cups vegetable broth
1 can (14.5 ounces) diced tomatoes
1 cup frozen corn kernels
1 cup frozen green beans
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the carrots, celery and bell pepper and cook for another 5 minutes. Stir in the oregano and basil.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 15 minutes or until vegetables are tender.
Add the tomatoes, corn and green beans to the pot and simmer for an additional 10 minutes or until vegetables are cooked through. Season with salt and pepper to taste before serving.
