Ingredients:

100g cooked shrimp
50g cooked squid rings
50g cooked mussels
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1/4 red onion, diced
2 tablespoons chopped parsley
2 tablespoons olive oil
2 tablespoons lemon juice
Salt and pepper to taste

Cooking Instructions:

In a large bowl combine the cooked shrimp, squid rings, mussels, red bell pepper, green bell pepper and red onion. Mix until all ingredients are evenly distributed.
Add the chopped parsley to the bowl and mix until combined.
In a small bowl whisk together the olive oil and lemon juice until combined. Pour over the seafood mixture and mix until all ingredients are evenly coated with the dressing.
Season with salt and pepper to taste.
Serve immediately or chill in the refrigerator for up to two hours before serving.
