Ingredients:

100g butter, softened
50g caster sugar
1 egg yolk
150g plain flour
25g cornflour

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
In a bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg yolk until combined.
Sift in the flour and cornflour and mix until a dough forms.
Roll out the dough on a lightly floured surface to about 5mm thick and cut out shapes using a cookie cutter or knife.
Place on a baking tray lined with parchment paper and bake for 12-15 minutes or until golden brown.
Allow to cool before serving or storing in an airtight container for up to 3 days.
