Ingredients:

50g butter, softened
50g light brown sugar
1 egg yolk
1 teaspoon vanilla extract
75g plain flour
½ teaspoon baking powder
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
25g chopped rhubarb

Cooking Instructions:

Preheat oven to 180°C/350°F/Gas Mark
Grease a baking tray with butter or oil.
In a bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolk and vanilla extract until combined.
In a separate bowl, sift together the flour, baking powder, cinnamon and nutmeg. Add this to the creamed mixture and mix until just combined. Fold in the chopped rhubarb until evenly distributed throughout the dough.
Roll tablespoonfuls of dough into balls and place on the prepared baking tray about 5cm apart from each other. Flatten slightly with your fingers or a fork dipped in flour if desired. Bake for 12-15 minutes or until golden brown around the edges. Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely before serving.
