Ingredients:

100g plain flour
50g rolled oats
75g butter, softened
75g light brown sugar
50g caster sugar
1 large egg, beaten
1 teaspoon vanilla extract
125g smooth peanut butter

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Line two baking trays with parchment paper.
In a medium bowl, mix together the flour and oats.
In a separate bowl, cream together the butter and sugars until light and fluffy. Beat in the egg and vanilla extract until combined.
Add the peanut butter to the creamed mixture and mix until combined.
Gradually add in the flour and oats mixture until fully incorporated into the dough.
Roll tablespoonfuls of dough into balls and place onto the prepared baking trays, leaving space between each cookie for them to spread during baking. Flatten each ball slightly with your fingers or a fork before baking if desired.
Bake for 8-10 minutes or until golden brown around the edges but still soft in the middle. Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely before serving or storing in an airtight container for up to 5 days.
