Ingredients:

60g butter, softened
60g peanut butter
60g caster sugar
1 egg yolk
120g plain flour
½ teaspoon baking powder
40g cashews, chopped

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Grease two baking trays with butter.
In a bowl, cream together the butter and peanut butter until light and fluffy. Add the sugar and egg yolk and mix until combined.
Sift in the flour and baking powder and mix until a dough forms. Stir in the chopped cashews.
Roll tablespoons of the dough into balls and place on the prepared baking trays, leaving space between each cookie for them to spread during cooking. Flatten each cookie slightly with your fingers or a fork.
Bake in the preheated oven for 12-15 minutes or until golden brown around the edges. Allow to cool on the trays for 5 minutes before transferring to a wire rack to cool completely.
