Ingredients:

1 chicken breast (150g)
1/2 cup of long grain white rice (100g)
1/4 cup of diced onion (50g)
1/4 cup of diced bell pepper (50g)
2 cloves of garlic, minced (10g)
1/2 teaspoon of paprika (2.5g)
1/4 teaspoon of dried oregano (1.25g)
2 tablespoons of olive oil (30ml)
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C).
Heat the olive oil in a large skillet over medium heat. Add the onion, bell pepper, garlic, paprika and oregano and cook until vegetables are softened, about 5 minutes.
Add the chicken breast to the skillet and cook until lightly browned on both sides, about 5 minutes per side.
Transfer the chicken and vegetables to an oven-safe baking dish. Add the rice and stir to combine with the vegetables and chicken. Season with salt and pepper to taste.
Cover the baking dish with aluminum foil and bake for 30 minutes or until chicken is cooked through and rice is tender.
