Ingredients:

100g lean ground beef
1 small eggplant, diced into cubes
1/2 onion, diced
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
2 tablespoons tomato paste
2 tablespoons olive oil
1/4 cup grated Parmesan cheese

Cooking Instructions:

Preheat oven to 375°F (190°C).
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the ground beef and cook until browned, about 8 minutes. Drain off any excess fat.
Add the eggplant cubes, oregano, basil and black pepper to the skillet and cook for another 5 minutes or until the eggplant is tender.
Stir in the tomato paste and mix well to combine all ingredients together. Transfer the mixture into an oven-safe baking dish. Sprinkle with Parmesan cheese on top.
Bake in preheated oven for 25-30 minutes or until golden brown on top. Serve hot with your favorite side dishes!
