Ingredients:

2 tablespoons of butter (30g)
2 tablespoons of brown sugar (30g)
1 ripe banana (100g)
1/4 cup of all
purpose flour (30g)
1/4 teaspoon of baking powder (1.25ml)
1/4 teaspoon of baking soda (1.25ml)
Pinch of salt (0.5ml)

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a small baking dish with butter or cooking spray.
In a medium bowl, mash the banana with a fork until it is mostly smooth. Add the butter and brown sugar and mix until combined.
In a separate bowl, sift together the flour, baking powder, baking soda and salt. Add this dry mixture to the wet ingredients and mix until just combined – do not overmix!
Pour the batter into the prepared baking dish and bake for 25 minutes or until golden brown on top and a toothpick inserted into the center comes out clean.
Let cool before serving or storing in an airtight container for up to 3 days at room temperature or up to 5 days in the refrigerator. Enjoy!
