Ingredients:

2 slices of whole wheat bread
2 slices of ham
1 egg
1 slice of cheese (your choice)
1/4 cup of chopped vegetables (your choice)
1/4 avocado, sliced or mashed
2 tablespoons of salsa

Cooking Instructions:

Heat a non-stick skillet over medium heat. Add the ham slices to the skillet and cook for 3 minutes on each side until lightly browned. Remove from the skillet and set aside.
In the same skillet add the egg and cook for 3 minutes until cooked through. Flip once during cooking time. Remove from the skillet and set aside.
Toast the bread slices in a toaster or in a dry skillet over medium heat for 2 minutes on each side until lightly browned.
Assemble the sandwich by layering the ham slices, egg, cheese slice, vegetables, avocado slices or mashed avocado onto one slice of toast bread. Top with salsa then top with remaining toast slice to close sandwich.
Serve immediately or wrap in foil to take on-the-go!
