Ingredients:

1 cup cooked chickpeas
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh cilantro leaves For the Lemon Dressing:
2 tablespoons freshly squeezed lemon juice
1 tablespoon olive oil
½ teaspoon honey
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C).
In a food processor, combine the chickpeas, olive oil, cumin, garlic powder, salt and pepper. Pulse until the mixture is combined but still slightly chunky.
Transfer the mixture to a bowl and stir in the parsley and cilantro leaves.
Form the mixture into small patties and place on a baking sheet lined with parchment paper. Bake for 15 minutes or until golden brown.
Meanwhile, prepare the lemon dressing by combining all of the ingredients in a small bowl and whisking until combined.
To assemble the salad, place some lettuce in a bowl or plate and top with falafel patties. Drizzle with lemon dressing and enjoy!
