Ingredients:

150g plain flour
75g cornmeal
2 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar
1 egg, lightly beaten
125ml milk
60ml vegetable oil or melted butter

Cooking Instructions:

Preheat the oven to 200°C/400°F/Gas Mark
Grease an 8 inch square baking tin with butter or oil.
In a large bowl, mix together the flour, cornmeal, baking powder, salt and sugar.
In a separate bowl, whisk together the egg, milk and oil or melted butter until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined – do not overmix!
Pour the batter into the prepared tin and bake for 25 minutes or until golden brown and a skewer inserted into the centre comes out clean.
Allow to cool before slicing and serving with butter or honey if desired.
