Ingredients:

2 chicken breasts, diced into cubes
1 onion, diced
2 cloves of garlic, minced
200g mushrooms, sliced
1 teaspoon of dried oregano
1 teaspoon of dried thyme
2 tablespoons of olive oil
Salt and pepper to taste
150ml chicken stock
2 tablespoons of plain flour
100ml double cream

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Heat the olive oil in a large ovenproof skillet over medium heat. Add the diced chicken and cook for 5 minutes until lightly browned. Add the onion and garlic and cook for a further 3 minutes until softened.
Add the mushrooms and herbs to the pan and season with salt and pepper to taste. Cook for a further 5 minutes until the mushrooms are softened.
In a small bowl mix together the chicken stock, flour and cream until smooth then pour into the skillet with the chicken mixture. Stir everything together until combined then transfer to the preheated oven for 25-30 minutes or until golden brown on top.
Serve hot with your favourite sides such as mashed potatoes or steamed vegetables. Enjoy!
