Ingredients:

2 slices of bacon
1 chicken breast fillet, diced into small cubes
1/4 cup of diced onion
1/4 cup of diced bell pepper (any color)
2 tablespoons of olive oil
Salt and pepper to taste
2 large tortillas or wraps

Cooking Instructions:

Heat a large skillet over medium heat. Add the bacon slices and cook until crispy. Remove from the skillet and set aside on a plate lined with paper towels.
In the same skillet, add the olive oil and heat over medium heat. Add the diced chicken breast cubes to the skillet and season with salt and pepper to taste. Cook for about 5 minutes until golden brown on all sides.
Add the onion and bell pepper to the skillet with the chicken cubes and cook for an additional 3-4 minutes until vegetables are softened.
To assemble your wrap, place one tortilla or wrap on a plate or cutting board. Place half of the cooked chicken mixture in a line down the center of the wrap, followed by half of the cooked bacon slices. Fold up both sides of the wrap to enclose filling inside then roll up tightly from one end to other end like a burrito or sushi roll. Repeat with remaining ingredients for second wrap.
Heat a large non-stick skillet over medium heat and lightly spray with cooking spray or brush with oil if desired (this will help prevent sticking). Place wraps seam side down in pan and cook for about 3-4 minutes per side until golden brown on both sides (you may need to press down lightly on each side while cooking). Serve warm!
