Ingredients:

50g butter, softened
50g caster sugar
1 egg yolk
75g plain flour
25g ground cashews

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Grease a baking tray with butter or oil.
In a bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolk until combined.
Sift in the flour and ground cashews and mix until a dough forms.
Roll out the dough on a lightly floured surface to about 5mm thick and cut out shapes using cookie cutters of your choice. Place on the prepared baking tray and bake for 12-15 minutes or until golden brown.
Allow to cool before serving or storing in an airtight container for up to 3 days.
