Ingredients:

2 large eggs
2 slices of bacon
1/4 cup shredded cheese of your choice
1/4 cup diced onion (optional)
1 whole wheat tortilla wrap
Salt and pepper to taste

Cooking Instructions:

Heat a skillet over medium heat. Add the bacon and cook until crispy. Remove from the pan and set aside on a plate lined with paper towels.
In the same skillet, add the diced onion (if using) and cook until softened. Push the onions to one side of the pan and crack in the eggs. Season with salt and pepper to taste. Cook until the whites are set but the yolks are still runny.
Place the tortilla wrap on a plate or cutting board. Top with cooked bacon, scrambled eggs, shredded cheese, and diced onion (if using). Fold up one side of the wrap then fold in each side to form a burrito shape.
Heat a nonstick skillet over medium heat and lightly spray with cooking oil or butter if desired. Place the wrap seam side down in the skillet and cook for about 2 minutes per side or until golden brown and crispy on both sides. Serve warm!
